NOT pioneer woman

I am definately not Pioneer Woman (see blog link to pioneer woman cooks), but I am trying my hand at this canning thing. I did a bit last year and thought it was ok - worth doing for certain goods like crabapple jelly and green tomato relish. That is until I discovered homemade jam this summer. I admit it, I am now obsessed with the canning. My adventure down tomato sauce lane with Heidi only increased my desire to become a canning goddess. My goal is to never buy jarred sauce again (it is really that good). Inspired by pioneer woman's photography skills, I thought I would try to "capture" crab apple juicing for this blogpost. Basically I filled a steam juicer with crab apples like so

and then steamed them for hours (literally), jared the juice and water bathed it for 10 minutes. The result was 26 beautiful quarts of crabapple juice:

Yes you read right, 26 quarts...if you add the 4 quarts I have left from my last harvest I have a grand total of 7.5 gallons of juice. If you add the chokecherry and plum juice we have to mix with this it totals about 10 gallons. In other words I can use my canning equipment all winter if I want to. I will have enough jelly to feed everyone I know.....that just thrills me.
